Mac And Cheese

Mac & Cheese 3 cups cooked macaroni noodles 2 cups bread crumbs 1/4 cup extra virgin olive oil 1 tsp fine sea salt 1-1/2 to 2 cups homogenized milk 1 cup grated old white cheddar 1 cup well-cooked white kidney beans 1 cup well-cooked steamed cauliflower 1/4 tsp grated nutmeg 1 tbsp Dijon mustard salt and pepper to taste Combine all milk, cheese, beans, cauliflower, nutmeg and mustard in a saucepan and simmer for about 15 minutes. Green Papaya Salad

  1 green papaya julienned 2 green chilies finely chopped 1garlic clove crushed 1cup coriander leaves ¼ cup mint leaves 2 tbsp ground roasted peanuts   Juice and zest of 2 limes 1 tbsp fish sauce 1 tbsp palm sugar softened in water 1 tsp sesame oil     Place all ingredients in large bowl and mix together being careful not to crush the papaya   Garnish with more crushed peanuts

Thai BBQ Sauce

6 cloves garlic, minced 4 inch piece finely grated ginger 3 Thai chillies minced 4 small green onions finely chopped 2 tablespoons finely chopped lemongrass Juice and zest from 3 limes Juice and zest from 1 orange 2 cups hoisin sauce 1/4 cup rice wine vinegar 2 tbsp Thai or Vietnamese fish sauce 2 tablespoons soy sauce 1/2 cup softened palm sugar Place all ingredients in saucepan and simmer for 45 minutes or until thickened to sauce consistency

Jerk Marinade For Chicken And Pork

10 green onions 1 tbsp allspice ½ tsp grated nutmeg ¼ cup peeled and chopped ginger 8 cloves garlic 3 scotch bonnet or habanero peppers 1 tbsp fresh  thyme leaves Juice and zest of 1 orange juice and zest of 1 lime 2 tbsp soy sauce 2 tbsp brown sugar 1 tbsp canola oil 1 tbsp sea salt   place all ingredients in food processor and pulse into a coarse paste.
