Jerk Marinade For Chicken And Pork

10 green onions 1 tbsp allspice ½ tsp grated nutmeg ¼ cup peeled and chopped ginger 8 cloves garlic 3 scotch bonnet or habanero peppers 1 tbsp fresh  thyme leaves Juice and zest of 1 orange juice and zest of 1 lime 2 tbsp soy sauce 2 tbsp brown sugar 1 tbsp canola oil 1 tbsp sea salt   place all ingredients in food processor and pulse into a coarse paste. Rub on pork or chicken before grilling.

Eggplant Parmesan

4 large eggplants sliced lengthwise into 1 cm thick pieces 1 cup grated parmigiano Reggiano Extra virgin olive oil 1 19 Oz can San Marzano plum tomatoes from Italy 1 1/2 cups water 1 white onion finely diced 5 cloves carlic crushed 1 handful Italian parsley coarsely chopped ½ cup pancetta diced into 1 cm pieces 2 cups bread crumbs mixed with 2 tbsp oil Sea salt and pepper _____________________________ Brush eggplant slices with oil and broil both sides until… (more…)
